Pack The Perfect Workday Lunch
Beyond deciphering a 401K and learning how to use the office coffee machine, one of the biggest challenges of working a 9-to-5 is lunch. While it’s tempting to buy every day — an excuse to leave the office for 15 minutes! A (theoretically) delicious, freshly made meal! — all of those $10 salads and $12 burrito bowls can really add up.
But the alternative doesn’t have to be Sad Desk Lunch Syndrome. You know the symptoms: a PB&J assembled cubicle-side, cold cuts and crackers, stale carrots with hummus. But packing a delicious, exciting lunch can actually be easy, as long as you follow a few golden rules:
Leftovers. In my opinion, leftovers are the answer to all of life’s mysteries: the Higgs-Boson particle, the missing Malaysia plane, Justin Bieber … but they’re an especially good solution to Sad Desk Lunch Syndrome. Whether you bring in leftover Pad Thai from last night’s delivery, an extra helping of whatever dinner you cooked, or your doggy bag from a restaurant, leftovers are a godsend.
Use your weekends wisely. Whether it’s Saturday or Sunday, take a few hours on the weekend to plan out what you’ll bring for the week, go grocery shopping and cook ahead as much as possible. You can even go ahead and pack your lunch into individual Tupperware, so that you only have to grab and go during the week. And of course, make leftovers. Soups and stews freeze well, so you can always make a double-batch on the weekends, bring it to work that week and then freeze the rest. Voila! Lunch is ready for you on a random busy week in the future.
Not to harp on this, but plan ahead. By Sunday, you likely know what lies in the work week ahead — your lunch meetings, office events or other anomalies. Get a sense of how many lunches you’ll need (but be flexible — plans can always change), and figure out what you’re in the mood for. Are you craving something in particular? Do you prefer to eat seasonally? Have you eaten quinoa at every meal in the past five months? Find lunchtime inspiration on food blogs or websites, Pinterest, Instagram or even Twitter. Keep it simple (nothing that requires plating), but be creative!
